Ingredients of Kashmiri Casserole

  • 2 cups (washed and soaked in water) basmati rice
  • 1/2 tsp cumin seeds
  • 3 cloves
  • 1 cinnamon stick
  • 3 cardamom
  • 1 bay leaves
  • 2 cups milk
  • 2 fresh cream
  • 1 tsp sugar
  • Salt to taste
  • 2 tablespoons Ghee
  • 1/2 cup dry fruits (cashews, almonds, raisins)
  • 2-3 rose petals

The method of making Kashmiri casserole

  • 1. Mix milk, cream, sugar, salt.
  • 2. Remove rice water and keep aside.
  • 3. Heat ghee in a pan and add cumin, cinnamon, bay leaf, cardamom, cloves.
  • 4. When it starts crackling, add rice to it and fry it for 2 minutes.
  • 5. Add milk mixture and half cup of water to it.
  • 6. Allow it to boil, cover and cook on low flame till it is fully cooked.
  • 7. Add dry fruits to it very comfortably.

    Garnish with rose petals and serve.
